Try out this simple and easy to cook HFG sausage casserole which needs little stir fry but loads of nutrition for all.
Ingredients:
- 500g lean sausages
- 2 teaspoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 carrots, sliced
- 1 red capsicum, chopped
- 400g can crushed tomatoes
- 400g can chilli beans or chilli baked beans
- 2 tablespoons tomato sauce
- 2 cups frozen green beans
Method:
Step 1Â Prick and boil sausages for around 5 minutes, until cooked. Leave to cool for a few minutes and then slice into pieces around 1 1/2-2cm thick; dry-fry in a non-stick frying pan until browned on both sides. Set aside.
Step 2 Add onion and garlic to pan, cook on medium heat for a few minutes. Add carrots and capsicum and stir-fry for another 2 minutes. Add crushed tomatoes, chilli beans and tomato sauce. Simmer for around 10 minutes, or until carrots are soft. Return sausages to pan, add green beans and heat for a further 5 minutes. Serve with rice or mashed potato.
