Since the weather has turned around here in the Big D (71 today!), I decided to whip up some homemade ice cream! It might be a little premature (I’m sure it’s not quite Spring yet), but it’s fun to pretend. This was my first experience with the ice cream maker too. We got a Cuisinart ice cream maker as a wedding present. It was super simple to use (and put together) which I appreciate. I can’t wait until summer actually rolls around to start making homemade sorbet with fresh fruit!
Ingredients:
- 4 overripe bananas
- 1/2 cup smooth peanut butter with no salt or sugar added
- 1/2 cup reduced-fat cream cheese\
- 4 teaspoons honey
- 1 teaspoon vanilla bean paste
Method:
Step 1 Peel bananas then mash in a large mixing bowl.
Step 2 Stir in the remaining ingredients and mix until mixture is smooth.
Step 3 Spoon mixture into small bowls or cups and freeze for 2 hours. Serve this yummy frozen treat on its own, or with in-season berries.
